WThis is an easy version of a cocktail featured on a new cocktail list. Designed as a party-sized pre-mixed which is packed full of essence of the Christmas time, making it excellent for hosting a holiday party. Reserve the remaining citrus syrup for breakfast cocktails, desserts, or to make another batch of bikinis.
Bikini Recipe
Makes enough for 10 servings
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
For the Syrup: Put the listed components into a pan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Then, take off the burner allowing it to cool down fully. Transfer into an clean bottle, seal and refrigerate it chilled, it can be stored for about four weeks.
To make Batch Mix: Combine the specified liquids into one large bottle, leave to sit for 60 minutes, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.
For serving: Pour 85ml of your cocktail base into your cocktail shaker filled with ice, gently stirring lightly for a minute until cold. Filter to a cold coupe glass or a similar vessel, garnish with some cranberries and complete it using a light spray of mandarin oil above the glass.
